Eating wholemeal, or wholewheat, can be tough at times. For me, eating bread should be an aromatic, flavourful, and ultimately pleasurable affair. Spelt is a great alternative to wholewheat flour, particularly if like me you find wholewheat bread can be quite dense and heavy. It has a wonderfully nutty taste , which I bring out a bit more in this recipe with a combination of oils, seeds, herbs, and flavourings, and it really makes for a fantastic spelt loaf. Of course the additions are up to you.

I enjoy using Spelt in breads for a number of reasons. Spelt is one of the super grains. It is a hulled grain, like emmer and einkorn, and belongs to the same family of plants as bamboo, rice, sorghum, and sugarcane and modern bread wheat. It is the most similar to modern wheat and can be used in a lot of the same ways you would use modern bread flour — i. Spelt contains more protein than modern wheat, and the protein is easier for a lot of people to digest. This means that some people who are allergic to wheat may be able to tolerate it. It has gluten, just like wheat, so it is not suitable for a gluten-free diet.

    Spelt is much easier to digest than modern-wheat; see here for an explanation. Spelt flour is now readily available in, even in most mainstream supermarkets. You can bake with wholegrain alone or mix wholegrain and white for a lighter loaf. This spelt loaf in bread-maker recipe is for a medium spelt loaf, using an equal mix of wholegrain and white. 🧟‍♂️
